HI-BAK 550 is considered an all-purpose milk replacer because it duplicates
the functions and characteristics of nonfat milk in the production of
bread, rolls and buns and all varieties of baked goods. HI-BAK 550 replaces
nonfat dry milk on a pound for pound basis; no changes in formulation
are required.
